Chicken Pepperoni Mascarpone Pasta !!!


If you’ve have never cooked with Mascarpone cheese, you’re definitely missing something out of your life.  It makes any pasta dish ribsticking good. Try this recipe and you won’t be disappointed…


Olive Oil

16 oz pasta of choice

2 chicken breast halves cut to bite sized pieces

coarse salt

black pepper

1/2 cup diced pepperoni (preferably natual casing pepperoni)

3 cloves garlic minced

1/4 of an onion minced

8 oz container of mascarpone cheese

2 handfuls of fresh spinach

1/3 cup cooking sherry

Parmesan Romano cheese


Boil water for pasta. Cook pasta along side till al dente.

In a saute pan, skillet or wok heated to med high, drizzle some olive oil.  sprinkle chicken with a pinch of salt and pepper. Add to pan. Keep stirring so that it does not stick.  Fry chicken till no more pink is showing. Add pepperoni and minced onion and garlic. Keep stirring till onion and garlic is softened and add cooking sherry. Continue to cook on med high heat till sherry is reduced to almost nothing. Add spinach and saute till reduced. Turn heat to low and add mascarpone cheese. Still till cheese is reduced to liquid and is blended in. Drain pasta into a serving dish and cover the pasta with the mixture. Stir well to coat. Serve with Parmesan Romano cheese. Enjoy…
