Stuffed French Toast Roll ups !!!

Not an original idea of mine. I saw this video on line and thought I’d give it a try. Glad I did cause it was real easy and DELICIOUS !!!

Batter:

2 eggs, 1/2 cup milk, 1 teaspoon vanilla, 1/2 teaspoon cinnamon, 1 teaspoon sugar.

Filling:

1/2 (4 oz) a block of cream cheese softened, 1 teaspoon sugar, 1 teaspoon vanilla. I used about a tablespoon of strawberry preserves. Use what you like. The video I watched had fresh diced strawberries.

Use a rolling pin to flatten out a piece of regular ordinary white bread. Nothing fancy here. Once flat ,cut off the crust so you have a basic rectangle.  Spread some filling over a third of the slice of bread and roll it up with the seam side down. Plain and simple repeating till stuffing is used up. It should Make about 12 rolls.

Preheat a skillet or flat griddle to medium low, butter and using tongs dip your roll into the egg batter and set into the pan SEAM SIDE DOWN.  Seam side down will seal it and it won’t fall apart when you rotate. Brown rotating quarter turns till done.

I drizzled maple syrup on mine. This can be a dessert  you know. Sprinkle powdered sugar on it. Throw a scoop of ice cream with chocolate syrup. Cooks preference. Do what you want to do and make it yours. Enjoy…
